Pasta Fan Lover

The first or second time I hung out with Bowen, I enthusiastically told him I was a pasta fan lover. That makes no sense. And I was mortified. I was a little too excited about Deli News pasta and got ahead of myself. This pasta salad idea was born from an empty bank account. I did a wee bit too much shopping this weekend and needed to scale back on my grocery trips. It’s a grilling out kind of night and was home early today so I made a pasta salad that can only get better with time.  I used what I had and came up with a recipe I will definitely use again.

 Here’s how I did it:

1 red bell pepper, quartered

½ yellow onion, quartered

1 zucchini, small dice

smashed, minced clove of garlic

2 Meyer lemons, halved

½ cup of feta

Roast vegetables ( including halved lemons) at 500 for 10-15 minutes or until vegetables begin to caramelize. In the mean time, boil pasta (I used whole grain penne)

Vinaigrette:

Juice the roasted lemons, whisk in extra virgin olive oil (2 lemons: 1/4 cup of olive oil), garlic, salt and pepper.

Combine pasta with roasted vegetables, feta and vinaigrette, the longer it sits the better it gets
