Summer Lunches

Some of my sweetest memories are of summers spent in my bathing suit, running in and out sopping wet, having friends over to swim, and my dad coming home for a summer lunch of fresh farmer’s market vegetables.I’m sure my dad came home for lunch more than for vegetables in the summer, but these are the meals that really stick out to me. Every time I eat fresh tomatoes, butter beans, and cornbread, I think of summer and those special moments with my family.  My mom makes the best cornbread in the world, and I know it’s because her mom, my mimi made the very best. She doesn’t use a recipe, instead knows by heart what the mix is supposed to look like. She uses cornmeal, an egg, a pinch of sugar, salt and pepper, then pours in buttermilk until it’s the right consistency. I’d say when the mixture looks like a thick cake-batter its time to stop stirring and get the mixture in a cast iron coated with a 1/4 inch of oil heated on the stove then popped in the oven. The rest of this lunch is whatever looks good at the farmer’s market. For my family in the summer this includes creamed corn, butter beans, peas, tomatoes,green beans, fried green tomatoes, and ice- cold onion. I don’t know if I am brave enough to make this special summer lunch on my own. Maybe one day I’ll pass this summer favorite down to my loved ones.
