Fudgy Sweet Potato Brownies

I am OBSESSED with these. Like cannot quit circling the brownie plate addicted. They are SO GOOD!! This is a bold statement but I do believe this is my very favorite recipe I’ve posted in MS Made history.

It’s rare to discover a decadent, fudgy delicious brownie recipe that is also dairy free, gluten free and sugar free (mostly) AND it’s packed with good for you sweet potatoes, dates and all natural peanut butter.

The true test for healthy food deliciousness is Bowen..he will not entertain my ideas of something that is vegan being divine, but he LOVES these brownies. He’s had one already and planning an ice-cream run for his second helping.

Main ingredients: sweet potato, dates, and peanut butter plus unsweetened cocoa powder

My only regret with this recipe is that it’s taken me this long to discover them. These will most definitely be a staple in our house, please try this and let me know how much you love them too!

Fudgy Sweet Potato Brownies

Ingredients
  1. 2 small sweet potatoes baked (or 1 1/2 cups)
  2. 1/3 cup pureed medjool dates (or 6-7 medjool dates)
  3. 1/2 cup all natural no sugar peanut butter
  4. 2 T vegan butter (optional)
  5. 2 T coconut flour (I used but was not in original recipe)
  6. 2 eggs
  7. 1/3 cup unsweetened cocoa powder
  8. 1/2 tsp baking powder
  9. pinch of salt
  10. 2/3 cup dark chocolate chips***
  11. *optional sweeter: 1/4 cup apple sauce ( I omitted and don't think the recipe needed)
Instructions
  1. Preheat oven to 375. Scoop out the sweet potato from skin and puree together sweet potato, vegan butter, peanut butter and dates until smooth, then whisk in eggs. In a separate bowl sift together baking powder, cocoa powder, salt and coconut flour. Next, stir the dry ingredients into the wet ingredients and fold in chocolate chips. Spray a 5 by 7 pyrex baking dish and pour batter into dish, bake for 12-15 minutes or until toothpick comes out clean!! I HIGHLY recommend slightly undercooking these if you prefer a "fudgier" brownie, maybe 12 minutes tops, let cool then cut.
  2. The only sugar not from fruit/veggies in this recipe is found in the chocolate chips. I used "enjoy life" brand semi sweet chocolate chips that are dairy free. They have 7 grams of sugar per serving so low!!
  3. For the topping, combine 1 T chocolate chips with 1 T coconut oil and melt in microwave for 15 seconds, pour over.
