Headed to Jackson

Well, hey friends. It has been a hectic week, please excuse my absense! I have a busy weekend planned in Jackson and have been getting ready to go out of town all week. Dentist, haircut, party for a friend, dad’s day–lots going on, anybody have anything fun happening this weekend??
I bet we do alot of cooking this weekend in honor of dad, and I can almost guarantee we make it to Walker’s one night.

This week in school has been EXHAUSTING. Each week the lab gets more advance. Everyday we pretty much break down a protein, fish and a tenderloin this week, and prepar an appetizer and entree in a 3-hour time frame. Sounds like ample amount of time but not when we are preparing salmon with tapenade compund butter, tuscan bean ragout, and wilted spinach with a grilled shrimp appetizer, and beef carpaccio–that’s our assignment for today by the way;)

One of my favorite things we made this week was an asian stirfry with summer vegetables and tofu along with shitake mushroom dumplings and a ginger-vinaegar sauce and citrus-chili sauce. I tried to snap some pics in class but they really don’t do the dish justice.

Also, I am still loving burrata cheese with heirloom tomatoes for these hot, humid afternoons. Unfortunately, WholeFoods is always out of burrata, I wonder why!?!?!? Anyways, here’s a pic of the salad I had last night, still loving my herb garden. Hope everyone has a great weekend!!!!
