Healthy Option Eats: savoring summer

Is anyone else still trying to eat healthy? As soon as summer starts to wind down I feel the need to over indulge in anything and everything around. Either I am prepping for a cold snap (highly unlikely) or I am severely  sort of sad summer is over.

I think the end of the summer should be savored with fresh vegetables, BASIL (because my garden is about to grow through my bedroom window), and light suppers. Here’s the perfect snack or supper that’s as easy to make as it is to eat.

Summer Vegetable “Pasta” Salad

1 zucchini, julienne**

1 carrot, julienne

1 squash, julienne (not pictured)

1 T evoo

1 T parmesan (grated on the microplane)

lots of fresh basil and tarragon

pinch of kosher salt and cracked pepper

** I used a julienne peeler for the veggies–much quicker than using a knife (remember my pasta post?)

What you do:

Steam, boil, or zap the vegetables in a pot, pan, or microwave safe bowl. Toss with olive oil, salt and P, herbs, and cheese. ENJOY…the last bit of summer 🙁
